  • 1. Basic Dashi Stock A

    (Original House soup base) Original Dashi broth is made from the highest quality materials. Its superb flavor is due to the addition of dashi mixture of kelp and katsuobushi (dried bonito flakes). Excellent for use in Japanese and American dishes; adds great umami (savory flavor) to shabu shabu.

    Made from high quality chili pepper, this concentrated soup base is an ideal soup base for shabu shabu.

  • 3. Miso Soup

    (Soybean Paste) We took a classic miso soup recipe and gave it a twist of our own. Our miso soup is packed with the same great umami flavor, but with even more nutrition thanks to the addition of Kettle & Fire Chicken Bone Broth. We've slow simmered all of the traditional ingredients together - ginger, garlic, seaweed, onion, and miso paste- to create the most flavorful and nutritious miso soup there is.

  • 4. Tonkotsu Soup

    (Pork Bone) Tonkotsu Broth is made of pork bones that have been boiled down until they dissolve into a cloudy white broth. The thick, creamy soup is also often flavored with chicken broth and pork fat.

    (Soy Sauce) Shoyu broth is a clear, brown broth flavored with soy sauce (shoyu). The soup is usually made of chicken broth but often contains other meats such as pork, beef, or fish depending on the region. Shoyu ramen is the most common type of ramen and is usually what is served when the menu does not specify a specific type of soup.

  • 6. Sukiyaki Soup

    Sukiyaki sauce made with a blend of soy sauce, sweet mirin rice wine and cooking sake for a rich, deep and savoury flavour, known as 'umami' in Japanese. Sukiyaki is a variety of traditional Japanese shabu shabu, where meat along with vegetables and other ingredients are cooked slowly in a rich broth. When your meat is cooked, don't forget to dip it in some raw egg for the complete sukiyaki experience.

    Original Vegetable broth is made from quality vegetables. This mixture of dehydrated vegetables is a naturally rich source of umami (savory flavor) and sweetness. It is perfect for vegetarian and vegan dishes. Use in soups, pastas, salads, grain dishes, stir-fried and grilled dishes. The umami (savory flavor) rich stock enhances any meat, poultry or seafood dishes.

    Tom Yum is a Thai hot and sour soup that is prepared with lemon grass, kaffir lime leaves, galanga, shrimp paste, palm sugar, fish sauce lime juice and canned tomatoes.

    Mala is the traditional flavor of Szechuan cuisine in China. Mala soup ingredients that are Sichuan peppercorns, dried chilies, star anise, garlic, and ginger. Other common ingredients include clove, fennel, cinnamon, and beef tallow.
